One of my new favorite recipes is this Italian spices vegetables from Bev Cooks blog. It’s a very fast full of taste and cheese one meal dish. Originally she makes it with chicken, but I also tried it meatless, and in my opinion a vegetarian option tastes much nicer. Somehow the flavor of the veggies opens up better alone and makes a perfect side to basically anything.

The one with the chicken on the other hand, is super easy and delicious dinner with a minimal prep work. Trying both resulted into two great additions to our table out of one recipe I’ve found.

Here’s my alteration:

  • 2 pounds chicken tenders
  • half medium broccoli head
  • half medium cauliflower
  • 1 colored pepper
  • 1 medium onion
  • 8 oz. havarti cheese
  • 2 table spoons olive oil
  • 2 table spoons Italian spices
  • 1 table spoon onion powder
  • 1 table spoon garlic powder
  • salt, pepper to taste

Preheat the oven to 350 F. To save time on a prep work I didn’t cut the tenders, simply kept them the way they are. I marinated them with the mix of spices and olive oil in the baking tray. Then divided broccoli and cauliflower into florets, cut onion into thin stripes, pepper into cubes and added all the vegetables to the chicken. Mixed it all up. Grated the cheese and spread it over the chicken with vegetables. Baked for 40 minutes and the dinner’s ready! For the vegetarian option – skip the chicken and add some more veggies. Bake for 30 minutes.

It comes out so tasty and rich, my kids were fighting over the last piece of cauliflower 🙂
