Most of the time I need a fast, tasty and yet nutritious idea for lunch. Same time all of these criteria have to evolve into something really appealing to my little picky judge. šŸ™‚

These are my latest three go to meals which always get great acceptance and disappear from the plateĀ in a blink of an eye without any arguments or debates.

  1. Loaded Whole Wheat ToastĀ 

Fry 1-2 eggs over easy or over medium, toast 2 pieces of whole wheat bread. Spread some avocado on one side of a toast, some cream cheese on the other one. Add eggs, favorite shredded cheese, preferred cooked meat/poultry, a piece of lettuce. Squish some mustard over and enjoy!

Its a bit of a messy sandwich, but the combination of taste is so perfect, I’m fine to use an extra napkin or two. šŸ™‚

2. Colorful Tortilla Pizza

Warm up the oven to 350F. Grab few tortillas, spread some pizza sauce over each, add pieces of cream cheese over, different colors of bell pepper, onions, precooked meat/poultry and top with favorite shredded cheese. Bake for 10 minutes or until cheese is melted.

Usually Alya helps me to go through all the steps. She loves spreading the sauce and adding all the ingredients herself.IMG_9698 3. One Pot Pasta

Since I discovered this recipe somewhere online, I don’t cook pasta anyhow different. I cannot believe I used to get few pots dirty while cooking pasta before.

After your water started boiling, add the pasta (any kind) and set the timer for the recommended minutes. Six minutes prior to finish – this is important, that’s my conclusion after many trials, and I really mean it – Ā these 6 minutes keep the veggies perfectly al dente. So 6 minutes prior to finish add all the vegetables to the pasta. In this case I had a handful of frozen peas and corn, half of a small onion and a red bell pepper cut in stripes, some broccoli florets.

I alter the ingredients every time according to my fridge content. My favorite combinations usually include 3-4 items out of the following – mushrooms, onions, bell pepper, snow peas, red cabbage, corn, peas, edamame beans, cauliflower and broccoli.

When the pasta is ready, drain the access water, saving half a cup of it on a side to thin the sauce if needed. My to go sauce is a splash of cooking cream, a spoon of cream cheese and sometimes few spoons of pasta sauce (it makes a cute pink color and Alya is always happy to mix the components together, so she can see the magic. šŸ™‚ )

Season to taste. Top with any grilled chicken, steak, fish, shrimps. Add favoriteĀ grated cheese. Prepare to indulge, this pasta is always a hit!IMG_2306
